The Specialty of the House


Billy practically begs for Chicken Peach Fajitas - I told him I think they are great, but they're nothing special, and he said that they are special because we only make them during peach season (June-July). So since they are special after all, here's the recipe:


About a pound of chicken sliced into strips, a sliced onion, a sliced bell pepper, about three peaches in syrup (cut them up and toss with a tablespoon of sugar the night before), and fajita seasoning.


Brown the chicken in a large skillet with 1 T of olive oil. I don't remember how long I cooked the chicken but the lovely McCormick Fajita Season Mix packet will tell you.


Transfer to a clean plate.


Suck your stomach in and smile for the camera!


Put the onions and bell peppers in with another tablespoon of olive oil and saute for 3 minutes.


Add the peaches and the chicken back to the onions and bell peppers - the directions are going to tell you to also add 1/4 c water - I drain as much liquid as I can from my peaches (this time it was about half that) and filled the rest up with water.


The all-important seasoning. 


Saute until warm then serve!

I typically don't put much on these - I only put salsa on one of them, but I did put hot sauce on both. I recommend a hot sauce that is somewhat fruity - above we have Island Grove Jamaican Hot Sauce (warning - not hot at all!), Pele's Hawaiian Volcano Sauce (I think this came from San Diego), Pace salsa (pepperheads, don't hate me - it was on sale), Galito's Garlic Peri Peri Sauce (also known around these parts as the only sauce that can make tofu taste awesome), and Prissy's of Vidalia's Vidalia Onion & Peach Sauce (also not hot).

Chicken Peach Fajitas

Peaches:
Slice 3 ripe peaches, stir with 1T sugar and refridgerate overnight.

1 lb chicken, cut into strips
1 green bell pepper, cut into strips
1 medium onion, cut into strips
1 packet McCormick Fajita Seasoning
2 T olive oil (divided)
1/4 c. water (or as much peach nectar as you can get from the peaches above + water)

Tortillas, hot sauce, salsa, etc.

*Follow directions on McCormick Seasoning packet, substituting as much peach nectar as possible for water and adding peaches when returning chicken to cooked veggies.

Top and enjoy and tell people you came up with this yourself. :)
